Doors open at 7pm every night of the week, with Thursday through Saturday running to 3am — those nights, plus Wednesday, are when the stairs get busy and the Centro crowd of travellers and South American visitors fills all three levels. Latin American plates keep the earlier part of the evening anchored, and the $$ band means a World's 50 Best Bars name on Calle del Colegio costs less than that ranking suggests. Smart casual is enforced loosely but genuinely, so leave the beachwear at the hotel; the room skews late twenties to mid forties. Year-round, and popular enough — 4.4 across some six thousand reviews — that arriving before nine is the sensible move.
