Rue du Château d'Eau sits just north of Strasbourg–Saint-Denis, a stretch of the 10th that stays awake long after the surrounding bistros have shuttered, and the doors here don't really open until just before midnight on Friday and Saturday, running through to six in the morning. The kitchen leans Italian and Mediterranean with fine-dining ambitions, which makes an earlier sit-down a sensible way to hold your ground before the floor fills. Music moves across techno, deep house, hip hop and 80s and 90s hits with plenty of commercial singalongs, and live sets keep the room loud rather than polite. VIP booths, bottle service and table service are all available, though the $$ band keeps things reasonable by central Paris standards. Smart casual is enforced, the crowd skews 25 to 45 young professionals, and weekends — Friday through Sunday — are when it counts.
