Lounge and chill house drift under the conversation here rather than over it, kept low enough that a table of six can talk across it, and on some evenings a live set takes the same restrained approach. Doors open at 7:30pm from Wednesday through Sunday, closed Monday and Tuesday, and the season runs May to October — this is a summer address in the Vallée de l'Ortolo, well outside Sartène town. The cooking is fine dining at the top price band, served at table with private dining available for groups who want the room to themselves. Fridays and Saturdays fill first, largely with Western European visitors and Corsicans in equal measure, and the dress code is formal in the proper sense: worth planning the outfit before you drive out. Admission is 30 and over. Book ahead; the setting does most of the persuading.
