The rhythm of the day splits cleanly: lunch from noon to 2pm around the pool, day beds and table service for anyone settling in with a bottle, then a second seating from 7 to 10pm when the French and Mediterranean kitchen does the heavier lifting. Beachwear is the accepted standard, which tells you how the place sees itself — a hotel rooftop on the Promenade des Anglais, not a dress-up address — though the $$$ band and valet at 223 Prom. des Anglais keep it firmly on the upper shelf. The crowd skews 25 to 45, a mix of visitors, Riviera locals and people in town on business, and Friday and Saturday fill first. Open April through October.
