Rotterdam weather turns over four times a year and Celest stays open through all of it, trading a summer golden hour high above the Cool district for winter evenings when the city lights do the work instead. Doors open at 5pm on Friday and Saturday only, and those two nights carry the whole week — the room fills with socialites, professionals off the clock and a share of visitors, all of them staying until the 1am close. Lounge and chill house sets keep the volume low enough for conversation, table service handles the drinks and the kitchen ranges widely, with private dining available for groups. Smart casual is enforced and the $$$$ band is real, so plan the bill accordingly. The crowd skews 25 to 45; drinking age is 18.
