Santa Maria sits on the northeastern shore of Paros, a sandy stretch that fills through the Cycladic summer and empties again once the season closes — which here runs May to October and shapes everything about the place. Day beds are the unit of currency, booked with table service attached, so an afternoon tends to stretch from late morning swims into the golden hours without anyone moving much. Lounge and chill house sets keep the volume conversational early and lift as the day goes on, while the kitchen works in Greek dishes designed to be eaten in a swimsuit. Beachwear is the whole of the dress code, though the $$$ band and a 30+ door policy set the tone: couples, a well-dressed regional crowd and Western European holidaymakers rather than a student scene.
