Fifteen years in and still the room Bangkok books when it wants to be seen eating well without the hush of full fine dining. The robata grill and sushi counter anchor a menu that runs black cod, wagyu and chu-toro tartare, and the terrace off the St. Regis ground floor keeps it from ever feeling like a hotel restaurant. Lunch is civilised; Friday and Saturday the bar takes over and it runs to two.

The kitchen is Japanese fine dining, sushi included, listed in the Michelin Guide Thailand and on The World's 50 Best Discovery, with private dining for groups who want the door closed and a Sunday brunch that starts at midday. Happy hour and full bar service keep the lounge and chill-house end of things moving, particularly late in the week when the crowd skews to the 25–45 bracket and a mix of visitors staying nearby. Smart elegant is the expectation, valet takes the car, and the $$$$ band is honest about what a robata-and-sushi evening here costs. Earlier in the week it's calm enough for families and two-person tables alike.
