Via dei Bastioni sits in Prati, the orderly, well-heeled quarter just north of the Vatican walls, and that address does a lot of the work here: you arrive on a quiet residential street and end up somewhere with a view worth lingering over. The kitchen works in a fine-dining register with full table service, and private dining can be arranged for smaller groups; music stays in the lounge and deep house range, with the occasional Europop lift, kept at a level that lets a table talk. Doors are open from 10am to midnight every day through the April–October season, so it functions as easily for a long lunch as for the drawn-out golden hour. Friday through Sunday brings the fullest rooms — a mix of couples, visiting Americans and Western Europeans, and Roman professionals. Smart casual, $$$, 30 and over.
