Doors open at 8pm every night of the week and don't close until 5am, which means dinner here is only the first act — Latin American plates land early, the live music builds through the evening, and the room shifts into lounge and chill house before commercial hits carry it past midnight. Thursday through Saturday are when the Guéliz address fills properly, with bottle service, VIP booths and shisha keeping tables occupied long after the plates are cleared. Dress smart elegant; the crowd skews 25 to 45, largely Western European, with a socialite-and-celebrity edge that justifies the top price band. It runs year-round, so the same formula holds in January as in high summer, and a table booked for 9pm gives you the full arc of the night without arriving to an empty floor.
