Japanese technique laid over Italian and Mediterranean produce is the working brief here, a kitchen that reads as much Tokyo as it does Campania, served on the roof of the Capri Palace Jumeirah on Via Capodimonte in Anacapri. Doors open at 7pm every night and the last tables turn out by 11:30, so this is a single-sitting evening rather than a long drift — arrive early in the season, between May and October, and the light does a lot of the work. Table service is the default, with bottle service, VIP booths and a private dining option for groups who want to be separate from the room. Lounge and chilled house keep the volume conversational. Friday through Sunday brings the fullest room, largely a well-travelled crowd of visitors and corporate diners in their late twenties to mid-forties. Smart casual, and the $$$$ band is not a bluff.
