Built out onto the rocks at the mouth of Hersonissos harbour, close enough that the spray reaches the outside tables on a blowing evening. The kitchen works Cretan mezze and whatever came in off the boats, opens at eight for breakfast and does not stop until one. The shisha terrace opens at six and shifts the register — cocktails, smoke and the harbour lights, with the sea doing the rest.

Lounge and chill house sit low under the conversation here, never loud enough to compete with the water — the kind of soundtrack that lets a table of six talk across plates of grilled fish while a couple two tables along keep to themselves.
