Weeknights on the nineteenth floor of OUE Bayfront draw a particular mix: Singapore's corporate set in the 25-45 bracket, unwinding after the Collyer Quay workday, alongside visiting diners from Europe and across Asia — which is why Monday through Friday runs busier here than a typical rooftop's weekend. The kitchen works across Japanese and Italian lines, and the Michelin recognition plus a nod on the Best Bar circuit means the drinks list is treated with the same seriousness as the plates. Lunch is a tight window, 11.30am to 2pm, before the room reopens at 5.30pm and settles into lounge and chill-house sets with a Latin current, running to 1am midweek and 2am on Friday and Saturday. Dress formally, budget accordingly at the top price band, and book ahead if you want the private dining room. Valet is available; Sundays it's closed.
