Full table service is the whole conceit here — plates arriving in sequence on Avinguda de la Pau, glasses topped between courses, nobody rushed towards a door. Doors open at 7pm every night of the week and the room runs until 1am, year-round rather than seasonally, which makes it one of the few Ibiza Town addresses that holds its shape in February as well as August. The cooking is Spanish and squarely fine dining, the soundtrack lounge and chill house kept at a level you can talk over, and the $$$$ band is honest about what an evening costs. Dress formally; the crowd skews professional and thirties-plus, with the occasional recognisable face, and it draws islanders and Western European visitors in roughly equal measure. Book ahead — with no quiet night in the week, walk-ins are optimistic.
