Doors open at 10:30am and close at 6:30pm, seven days a week, which makes this a daylight affair from the first coffee to the last rosé — there is no night shift here, and the day is built to be spent in full. Daybeds are the natural unit of a visit, with table and bottle service running to them and valet handling the arrival on the Chemin de l'Épi in Ramatuelle, a few minutes out from St. Tropez proper. The kitchen works in French and Mediterranean registers at a fine-dining level, and the $$$$ band reflects that; deep house and lounge sets stay low enough to talk over. Thursday through Saturday draw the heaviest crowd — couples, Riviera regulars and visiting Western European and Middle Eastern guests — with a 30+ door and beach chic expected.
