About Pablo
Doors open at 7.30pm every night of the week and don't close until 3am, which tells you most of what you need to know about the shape of an evening here: a French dinner that stretches long past dessert, then tables cleared and the room tipping into afrohouse and tech house until the small hours. Traversette des Lices puts it a few steps from the square, and unusually for St Tropez the busiest nights fall Monday through Wednesday — a local rhythm as much as a visitor one, with a Western European and Middle Eastern crowd broadly in the 25-45 range. Bottle service, VIP booths and private dining sit behind the $$$$ band, and valet spares you the parking problem. Smart casual holds throughout, though the later it gets the more the room dresses for it. Open year round, which few things in this town are.
